2 medium-sized eggplants

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon red pepper flakes (optional)

Fresh basil leaves for garnish

Olive oil for drizzling

Salt and pepper to taste

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Eggplants: Slice each eggplant into 1/2-inch thick rounds. Lay them out on the baking sheet and sprinkle with salt. Let sit for about 15 minutes to draw out excess moisture. This will help them crisp up during baking.

      Rinse and Dry: After 15 minutes, rinse the eggplant rounds under cold water to remove the salt. Pat them dry with paper towels to remove any excess moisture.

        Season the Eggplants: Drizzle olive oil over the eggplant slices on both sides. Sprinkle with garlic powder, oregano, and a pinch of red pepper flakes, if using. Season with black pepper to taste.

          Bake the Eggplants: Place the seasoned eggplant slices in the preheated oven and bake for about 15 minutes or until they start to become tender. Remove from the oven and let them cool slightly.

            Add Sauce and Cheese: Spoon a small amount of marinara sauce onto each eggplant slice. Top with mozzarella and a sprinkle of Parmesan cheese.
