2 cups fresh spinach, chopped

8 large egg whites

1/2 cup low-fat cottage cheese

1/2 cup shredded low-fat mozzarella cheese

1/4 cup diced bell pepper (any color)

1/4 cup diced onion

2 tablespoons fresh chives, chopped

1 teaspoon garlic powder

Salt and pepper to taste

Cooking spray or olive oil for greasing muffin tin

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with cooking spray or olive oil.

    Sauté Vegetables: In a medium skillet over medium heat, sauté the chopped onion and bell pepper until softened, about 3-4 minutes. Add the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and set aside to cool slightly.

      Mix Egg White Base: In a large mixing bowl, whisk together the egg whites, cottage cheese, mozzarella cheese, garlic powder, salt, and pepper until well combined.

        Combine: Gently fold the sautéed vegetable mixture into the egg white mixture. Make sure everything is evenly distributed.

          Fill Muffin Tins: Pour the mixture evenly into the prepared muffin tin, filling each cup about three-quarters full.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the muffins are firm to the touch and lightly golden on top.
