1 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

½ cup unsalted butter, cold and cubed

½ cup buttermilk

4 large eggs

½ cup crumbled feta cheese

¼ cup chopped fresh spinach

1 teaspoon dried oregano

½ teaspoon black pepper

1 tablespoon olive oil (for greasing)

Optional: Fresh herbs for garnish (e.g., parsley or dill)

Preheat the Oven: Preheat your oven to 425°F (220°C). Grease a mini muffin tin with olive oil or line with paper liners.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, and salt until well combined.

      Cut in the Butter: Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

        Add the Buttermilk: Pour in the buttermilk and stir gently with a fork until just combined. Be careful not to overmix; a few lumps are okay.

          Prepare the Filling: In a separate bowl, whisk together the eggs, then add the crumbled feta cheese, chopped spinach, oregano, and black pepper. Mix until well incorporated.

            Assemble the Bombs: Take a small amount of biscuit dough (about a tablespoon) and flatten it in your palm. Place a teaspoon of the egg and feta mixture in the center, then fold the dough over to encase the filling completely. Roll it into a ball and place it seam-side down in the prepared muffin tin. Repeat until all dough and filling is used, filling each muffin cup.
