2 medium zucchinis, grated

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon garlic powder

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 large egg, beaten

½ teaspoon dried oregano

½ teaspoon dried basil

1 cup marinara sauce (for serving)

Slider buns or small sandwich rolls

Fresh basil leaves (for garnish)

Optional: Olive oil for frying

Prepare the Zucchini: In a large bowl, combine the grated zucchinis with salt. Let them sit for about 10-15 minutes to draw out excess moisture. After resting, use a clean kitchen towel or cheesecloth to squeeze out as much water as possible from the zucchinis.

    Mix the Batter: In the same bowl, add black pepper, garlic powder, breadcrumbs, grated Parmesan, beaten egg, oregano, and basil to the drained zucchini. Mix well until all ingredients are combined.

      Shape the Patties: Form the zucchini mixture into small slider-sized patties, roughly 2-3 inches in diameter. Ensure they are compact, so they hold together while cooking.

        Cook the Patties: Heat a non-stick skillet over medium heat. Add a drizzle of olive oil if desired. Once hot, place the patties in the skillet (you may need to do this in batches) and cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove them and place on a paper towel to absorb excess oil.

          Assemble the Sliders: While the patties are cooling, lightly toast the slider buns in the same skillet or in the oven. Once toasted, place a zucchini patty on each bun, add a spoonful of marinara sauce, and top with fresh basil leaves. Place the top half of the bun over each slider.
