1 lb (450g) boneless chicken thighs, cut into small pieces

1/2 cup plain yogurt

2 tablespoons tikka masala paste

1 tablespoon lemon juice

1 teaspoon ground cumin

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

8 small flour tortillas

1 cup shredded lettuce

1/2 cup diced tomatoes

1/4 cup red onion, finely chopped

1/4 cup cilantro, chopped

1/2 cup cucumber slices

1/2 cup mint chutney (for serving)

1 teaspoon olive oil (for cooking)

Instructions
 

Marinate the Chicken: In a large bowl, combine the yogurt, tikka masala paste, lemon juice, cumin, paprika, garlic powder, ginger powder, salt, and pepper. Add the chicken pieces and mix well, ensuring all the chicken is coated. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

    Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the marinated chicken pieces to the skillet, cooking for about 8-10 minutes, stirring occasionally until the chicken is cooked through and slightly charred.

      Prepare the Tortilla Sliders: Warm the tortillas in a dry skillet or microwave for about 15 seconds to make them pliable.

        Assemble the Sliders: On each tortilla, place a few pieces of the cooked chicken, followed by a handful of shredded lettuce, diced tomatoes, chopped red onion, cucumber slices, and cilantro.

          Fold and Secure: Fold the sides of the tortilla over the filling, then roll it up tightly to form a slider. You can secure it with a toothpick if necessary.
