Ingredients

For the Chicken Marinade:

1 lb chicken breast, cut into small cubes

3 cloves garlic, minced

1 tablespoon dried oregano

1 tablespoon ground cumin

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

Juice of 1 lemon

For the Tzatziki Sauce:

1 cup Greek yogurt

½ cucumber, grated and excess water squeezed out

2 cloves garlic, minced

1 tablespoon fresh dill, chopped (or 1 teaspoon dried)

1 tablespoon olive oil

1 tablespoon vinegar (white or red wine)

Salt and pepper to taste

For Assembling:

12 mini whole wheat pita bread

1 cup shredded lettuce

1 cup diced tomatoes

½ red onion, thinly sliced

Crumbled feta cheese (optional)

Extra fresh dill for garnish (optional)

Instructions

Marinate the Chicken:

In a mixing bowl, combine the minced garlic, dried oregano, ground cumin, paprika, salt, pepper, olive oil, and lemon juice. Add the chicken cubes and mix until evenly coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

      Prepare the Tzatziki Sauce:

In a small bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, olive oil, vinegar, salt, and pepper. Mix well and refrigerate for at least 15 minutes to allow the flavors to meld.

          Cook the Chicken:

Heat a large skillet over medium-high heat. Add the marinated chicken and cook for about 8-10 minutes, stirring occasionally, until fully cooked and golden brown. Ensure that the internal temperature of the chicken reaches 165°F (75°C).

              Assemble the Sliders:

Warm the mini whole wheat pita bread in a dry skillet or oven for a few minutes until slightly toasted. Cut the pita in half or keep them whole if large enough.

Fill each pita with a spoonful of the cooked chicken, followed by a generous dollop of tzatziki sauce. Top with shredded lettuce, diced tomatoes, red onion slices, and crumbled feta cheese if desired.

                    Serve & Enjoy:

Arrange the sliders on a platter, sprinkle with extra fresh dill if using, and serve immediately. These mini gyro sliders make a delightful appetizer or a quick meal!
