1 ½ cups crushed graham crackers

1/3 cup unsalted butter, melted

2 tablespoons granulated sugar

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1 cup assorted fresh fruits (strawberries, blueberries, kiwi, and mango, diced)

Fresh mint leaves for garnish (optional)

Zest of 1 lemon (optional)

Instructions
 

Prepare the Crust:

    - In a medium bowl, combine crushed graham crackers, melted butter, and granulated sugar. Mix until the crumbs are well-coated and resemble wet sand.

      Form the Cups:

        - Using a muffin tin, line with cupcake liners. Press about 1 tablespoon of the graham cracker mixture into the bottom of each liner, forming a firm crust. Use the back of a shot glass or your fingers to compact it well. Place in the refrigerator to set while you prepare the cheesecake filling.

          Make the Cheesecake Filling:
