Ingredients

12 mini taco shells (store-bought or homemade)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup crumbled feta cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon chili powder

1/4 teaspoon cayenne pepper (optional, for spice)

1/2 cup cooked and crumbled chorizo or ground beef (optional)

1/4 cup fresh cilantro, chopped

1/2 cup diced tomatoes (for garnish)

1/4 cup sliced black olives (for garnish)

Sour cream (for serving)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Cheese Filling: In a mixing bowl, combine the softened cream cheese, cheddar cheese, feta cheese, garlic powder, onion powder, chili powder, and cayenne pepper (if using). Mix until well combined and creamy.

Add Optional Ingredients: If you're using cooked chorizo or ground beef, fold it into the cheese mixture. Then add in the chopped cilantro and mix thoroughly.

Stuff the Taco Shells: Carefully fill each mini taco shell with the cheesy filling, using a small spoon or piping bag to make it easier. Be generous and ensure each shell is nicely packed.

Arrange on a Baking Sheet: Place the filled taco shells on a baking sheet lined with parchment paper, ensuring they are not overcrowded.

Bake the Taco Shells: Bake in the preheated oven for about 10-12 minutes or until the cheese is melty and the shells are slightly golden.

Garnish and Serve: Remove from the oven and allow them to cool slightly. Top with diced tomatoes and black olives. Serve hot with a dollop of sour cream on the side.

Enjoy: These mini cheese-stuffed taco shells are best enjoyed warm, so dig in and savor the cheesy goodness!
