Ingredients
  

1 cup cooked rice (preferably short-grain or sushi rice)

1 cup shredded sharp cheddar cheese

1/2 cup breadcrumbs (plus extra for coating)

2 large eggs

1/4 cup milk

1/2 cup finely chopped fresh jalapeños (seeds removed for less heat, if desired)

1/4 cup chopped green onions

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Vegetable oil (for frying)

Instructions
 

Prepare the Mixture:

    - In a large mixing bowl, combine the cooked rice, shredded cheddar cheese, breadcrumbs, chopped jalapeños, green onions, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.

      Add Wet Ingredients:

        - In a separate bowl, whisk together the eggs and milk. Pour the egg mixture into the rice mixture and stir until fully incorporated. The mixture should be thick and hold together when formed into a ball. If too dry, add a splash more milk; if too wet, add a bit more breadcrumbs.

          Form the Fritters:

            - With clean hands, shape the mixture into small balls or patties, about the size of a golf ball or 1.5 inches in diameter. Roll each fritter in the additional breadcrumbs for a crispy outer layer.

              Fry the Fritters:

                - In a large skillet, heat about 1/2 inch of vegetable oil over medium heat until shimmering (approximately 350°F or 175°C). Careful, don’t let it smoke!

                  - Fry the fritters in batches, being careful not to overcrowd the pan. Cook for 3-4 minutes per side, or until golden brown and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

                    Serve:
