1 cup fresh broccoli florets, chopped

4 large eggs

½ cup milk (or plant-based milk)

1 cup shredded cheddar cheese (or cheese of choice)

½ teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon salt

¼ teaspoon black pepper

4 slices whole grain bread (or bread of choice)

Olive oil or non-stick cooking spray (for greasing)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with olive oil or non-stick spray to prevent sticking.

    Prepare the Broccoli: In a small pot, bring water to a boil. Add the chopped broccoli florets and blanch for about 2 minutes until they are bright green. Drain and rinse with cold water to stop the cooking process. Set aside.
