8 small corn tortillas

1 cup black beans, drained and rinsed

1 cup cherry tomatoes, quartered

1 avocado, diced

4 large eggs

1/2 cup shredded cheddar cheese

1/4 cup fresh cilantro, chopped

1 tablespoon olive oil

1 teaspoon smoked paprika

Salt and pepper, to taste

Lime wedges, for serving

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Tortilla Cups: Brush both sides of each corn tortilla lightly with olive oil. Press the tortillas into the wells of a muffin tin to create cups. You may need to use a baking cup to help shape them.

      Bake Tortilla Cups: Place the muffin tin in the oven and bake for 10-12 minutes or until the tortillas are golden brown and crispy. Once done, remove them from the oven and set aside.

        Scramble the Eggs: In a medium bowl, whisk together the eggs, smoked paprika, salt, and pepper. Heat a non-stick skillet over medium heat, then pour in the egg mixture. Scramble the eggs until cooked through, about 4-5 minutes. Remove from heat.

          Assemble Tostada Cups: Begin layering your ingredients. Start by adding a spoonful of black beans into each tostada cup, followed by a layer of scrambled eggs.

            Add Fresh Toppings: Top each cup with diced tomatoes, avocado, and a sprinkle of cheddar cheese. Return to the oven for an additional 2-3 minutes to melt the cheese.

              Garnish and Serve: Remove the tostada cups from the oven and finish with fresh cilantro on top. Serve with lime wedges for a zesty kick.
