Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, chilled and cubed

3/4 cup buttermilk

1 cup cooked breakfast sausage, crumbled

1 cup cheddar cheese, shredded

1/2 cup scrambled eggs (3 large eggs, cooked and chopped)

1 tablespoon honey

1 teaspoon garlic powder

1/2 teaspoon black pepper

Egg wash (1 egg beaten with 1 tablespoon water) for brushing

Optional: Fresh chives for garnish

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Make the Biscuit Dough: In a large bowl, whisk together the flour, baking powder, and salt. Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Add Buttermilk: Gradually pour in the buttermilk and mix until just combined. Do not overmix; the dough should be slightly sticky.

Prepare the Filling: In a separate bowl, combine the crumbled sausage, shredded cheddar cheese, scrambled eggs, honey, garlic powder, and black pepper. Mix well to ensure everything is evenly distributed.

Form the Biscuit Bombs: On a floured surface, roll out the biscuit dough to about 1/2 inch thick. Cut out circles using a biscuit cutter or a glass (about 3 inches in diameter).

Assemble: Take a dough circle, place a generous tablespoon of the sausage-cheese mixture in the center, and fold the edges of the dough over the filling to enclose it completely. Pinch to seal and form a ball. Repeat until you use all the dough and filling.

Bake: Place the biscuit bomb bites on the prepared baking sheet seam side down. Brush the tops with the egg wash to give them a golden color. Bake in the preheated oven for about 15-18 minutes or until golden brown.

Cool and Serve: Remove from the oven and allow to cool for a few minutes. Garnish with fresh chives if desired. Serve warm and enjoy your Mini Breakfast Biscuit Bomb Bites!
