1 can (20 oz) young green jackfruit in brine or water, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon salt

¼ teaspoon black pepper

½ cup BBQ sauce (your choice of flavor)

12 mini slider buns (or taco-sized tortillas)

½ cup red cabbage, shredded

½ cup fresh cilantro, chopped

Prepare Jackfruit: Begin by cutting the jackfruit into smaller pieces, discarding the core if necessary, and shredding it with your fingers to resemble pulled pork.

    Sauté Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, until translucent. Stir in the garlic and cook for an additional 30 seconds until fragrant.

      Cook Jackfruit: Add the shredded jackfruit to the skillet. Sprinkle the smoked paprika, cumin, chili powder, salt, and pepper over the jackfruit. Stir well to combine everything, cooking for about 5 minutes to allow the spices to bloom.
