Mini BBQ Chicken Waffle Melts

2 cups cooked shredded chicken

1 cup BBQ sauce (your choice of flavor)

1 cup shredded cheddar cheese

1 cup all-purpose flour

1 cup cornmeal

2 tablespoons sugar

1 tablespoon baking powder

1 teaspoon salt

1 cup buttermilk

1 large egg

1/4 cup melted butter

Cooking spray or additional melted butter for greasing the waffle iron

Optional: sliced green onions or fresh cilantro for garnish

Prep the BBQ Chicken: In a mixing bowl, combine the shredded chicken with the BBQ sauce until the chicken is well-coated. Set aside to marinate for a few minutes while you prepare the waffle batter.

    Make the Waffle Batter: In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt until well combined. In another bowl, mix the buttermilk, egg, and melted butter together. Pour the wet ingredients into the dry ingredients and stir until just combined; be careful not to overmix—some lumps are okay.

      Preheat Waffle Iron: Preheat your waffle iron according to the manufacturer's instructions and lightly grease it with cooking spray or melted butter.

        Cook the Waffles: Pour about 1/4 cup of the waffle batter onto each section of the preheated waffle iron. Close the lid and cook until waffles are golden brown and crispy, approximately 3-5 minutes. Repeat until all batter is used, making about 8 mini waffles.

          Assemble the Melts: Preheat your oven to 350°F (175°C). On half of each mini waffle, place about a tablespoon of the BBQ chicken mixture, followed by a generous sprinkle of shredded cheddar cheese. Top each with another mini waffle to create a sandwich.
