For the BBQ Filling:

1 cup cooked and shredded jackfruit (or pulled chicken for a non-vegetarian option)

1 cup BBQ sauce (your favorite brand or homemade)

1 tablespoon apple cider vinegar

1/2 teaspoon smoked paprika

1/4 cup chopped green onions for garnish

For Serving:

Lettuce leaves (for a fresh crunch)

Pickles (optional)

Sliced tomatoes (optional)

Instructions
 

Prepare the Cauliflower Buns:

    - Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

      - Steam or microwave the cauliflower florets until tender, about 5–7 minutes. Drain well and let the florets cool slightly.

        - In a food processor, pulse the cauliflower until it resembles rice. Squeeze out any excess moisture using a clean kitchen towel.

          - In a bowl, combine the processed cauliflower, mozzarella cheese, almond flour, egg, garlic powder, onion powder, oregano, salt, and pepper. Mix well until all ingredients are thoroughly combined.

            - Shape the mixture into small patties, about 2–3 inches in diameter, and place them on the prepared baking sheet.

              - Bake in the preheated oven for about 25–30 minutes, flipping halfway through, until golden and firm.

                Make the BBQ Filling:

                  - In a medium bowl, combine the shredded jackfruit (or chicken) with BBQ sauce, apple cider vinegar, and smoked paprika. Mix well to coat the meat evenly.

                    - Place the mixture in a saucepan over medium heat and cook until heated through, about 5–7 minutes. Stir occasionally.
