Mini Bacon Egg & Cheese Biscuit Stacks

Ingredients
  

1 can (16.5 oz) refrigerated flaky biscuit dough

6 strips of bacon, cooked and crumbled

4 large eggs

1/4 cup milk

Salt and pepper, to taste

1 cup shredded cheddar cheese

1/4 cup green onions, finely chopped (optional)

Cooking spray or butter, for greasing

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a baking sheet or line it with parchment paper.

    Prepare the Biscuit Dough: Open the can of biscuit dough and separate the biscuits. Cut each biscuit in half to create smaller rounds.

      Bake the Biscuits: Place the biscuit halves on the prepared baking sheet and bake according to package instructions, usually about 10-12 minutes, or until golden brown. Remove from the oven and let cool slightly.

        Cook the Bacon: In a skillet, cook the bacon over medium heat until crispy. Remove and drain on paper towels. Once cool, crumble the bacon into small pieces.

          Make the Scrambled Eggs: In a bowl, whisk together the eggs, milk, salt, and pepper. In the same skillet, pour in the egg mixture and cook on medium-low heat, stirring gently until the eggs are just set but still soft. Remove from heat.

            Assemble the Towers: Take one biscuit half and add a spoonful of scrambled eggs on top. Sprinkle some crumbled bacon and cheese over the eggs. Top with another biscuit half. Repeat the stacking process to create a mini tower of biscuits with the remaining ingredients.

              Melt the Cheese: If desired, place the assembled stacks back in the oven for about 3-5 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Remove from the oven and, if desired, sprinkle with chopped green onions for a pop of color. Serve warm and enjoy your Biscuit Towers!
