Ingredients

4 small flour tortillas

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1/2 cup black beans, drained and rinsed

1/2 cup corn (fresh, frozen, or canned)

1/2 red bell pepper, finely diced

1/2 small onion, finely diced

1/2 cup spinach leaves, chopped

1 teaspoon taco seasoning

1 tablespoon olive oil

Salsa or guacamole, for dipping (optional)

Instructions

Prepare the Filling: In a mixing bowl, combine the shredded cheese, black beans, corn, diced bell pepper, diced onion, chopped spinach, and taco seasoning. Mix everything well until all the ingredients are evenly coated with the seasoning.

Assemble the Quesadilla Rolls: Lay one tortilla flat on a clean surface. Place about 1/4 cup of the veggie and cheese mixture in the center of the tortilla. Roll it tightly, ensuring the filling is tucked in as you go. Repeat this process with the remaining tortillas and filling.

Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 3-5 minutes. This step helps achieve a crispy exterior.

Brush with Olive Oil: Lightly brush or spray the outside of each quesadilla roll with olive oil. This will help them crisp up and give a beautiful golden-brown color.

Air Fry the Quesadilla Rolls: Place the prepared quesadilla rolls in a single layer in the air fryer basket, ensuring they are not overcrowded. If necessary, cook in batches. Air fry for 6-8 minutes, flipping halfway through, until the rolls are crispy and golden brown.

Serve and Enjoy: Carefully remove the quesadilla rolls from the air fryer and let them cool for a minute. Serve warm with salsa or guacamole for dipping.
