4 large whole wheat or spinach wraps

1 medium zucchini, sliced into rounds

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 medium red onion, sliced into rings

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

½ cup feta cheese, crumbled (optional)

¼ cup Kalamata olives, pitted and chopped

3 tablespoons olive oil

2 tablespoons balsamic vinegar

2 teaspoons dried oregano

Salt and pepper to taste

½ teaspoon garlic powder (optional)

Preheat the Grill: Begin by preheating your grill or grill pan to medium-high heat.

    Prepare the Vegetables: In a mixing bowl, combine the zucchini, red and yellow bell peppers, red onion, and cherry tomatoes. Drizzle with 2 tablespoons of olive oil, balsamic vinegar, oregano, garlic powder (if using), salt, and pepper. Toss the vegetables until evenly coated.

      Grill the Vegetables: Place the marinated vegetables on the grill. Grill for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks. Remove from the grill and let cool slightly.

        Assemble the Wraps: Lay a whole wheat or spinach wrap flat. Start with a handful of fresh spinach leaves in the center. Add a generous amount of the grilled veggies on top of the spinach. Sprinkle with crumbled feta cheese and chopped Kalamata olives for added flavor.
