Maple Roasted Beets with Feta

4 medium-sized beets, trimmed and scrubbed

2 tablespoons olive oil

3 tablespoons pure maple syrup

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and pepper, to taste

½ cup crumbled feta cheese

¼ cup walnuts, roughly chopped (optional)

Fresh parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Beets: Wrap each beet individually in aluminum foil. Place them on a baking sheet and roast in the preheated oven for 45-60 minutes, or until a fork easily pierces through. Allow the beets to cool slightly before handling.

      Peel the Beets: Once cooled, use your hands or a paper towel to rub off the skins of the beets. Cut them into wedges.

        Make the Maple Glaze: In a small bowl, mix together the olive oil, maple syrup, thyme, salt, and pepper until well combined.

          Coat the Beets: In a large mixing bowl, toss the beet wedges with the maple glaze until evenly coated.

            Roast Again: Spread the glazed beets out onto a baking sheet in a single layer and roast for an additional 20-25 minutes, turning them halfway through, until caramelized and tender.

              Prepare the Feta and Walnuts: While the beets roast, if you’re using walnuts, toast them in a dry skillet over medium heat for about 5 minutes, until fragrant. Set aside.

                Assemble the Dish: Once the beets are roasted, transfer them to a serving platter. Sprinkle crumbled feta cheese and toasted walnuts (if using) over the top.

                  Garnish and Serve: Finish with a sprinkle of fresh parsley and an extra drizzle of maple syrup, if desired. Serve warm or at room temperature.
