1 medium acorn squash

3 tablespoons pure maple syrup

2 tablespoons olive oil

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)

1/4 cup chopped pecans or walnuts (optional)

Crumbled feta cheese for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Acorn Squash: Cut the acorn squash in half lengthwise and scoop out the seeds using a spoon. Then, slice each half into 1-inch thick rings. You should end up with about 8-10 rings.

      Make the Maple Glaze: In a small bowl, whisk together the maple syrup, olive oil, ground cinnamon, nutmeg, salt, black pepper, and rosemary until well combined.

        Coat the Rings: Place the acorn squash rings onto the lined baking sheet. Drizzle the maple glaze over the squash rings, ensuring each ring is well-coated. You can use a brush or a spoon to spread the mixture evenly.

          Roast the Squash: Roast in the preheated oven for about 25-30 minutes, flipping the rings halfway through to ensure even cooking. The squash should be tender and slightly caramelized.
