8 chicken drumsticks

1/2 cup pure maple syrup

1/4 cup soy sauce

3 cloves garlic, minced

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon ground black pepper

1 teaspoon paprika

1/2 teaspoon salt

1 tablespoon olive oil

Fresh thyme sprigs (for garnish, optional)

Prepare the Marinade: In a medium mixing bowl, combine the maple syrup, soy sauce, minced garlic, Dijon mustard, apple cider vinegar, black pepper, paprika, and salt. Whisk together until well blended.

    Marinate the Chicken: Place the chicken drumsticks in a large resealable plastic bag or shallow dish. Pour the marinade over the drumsticks, ensuring they are completely coated. Seal the bag (or cover the dish) and refrigerate for at least 1 hour, or overnight for best results.

      Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil and place a wire rack on top (this will help the chicken cook evenly).

        Prepare for Baking: Remove the drumsticks from the marinade and let the excess marinade drip off. Reserve the marinade for basting. Arrange the drumsticks on the wire rack.

          Bake the Drumsticks: Bake the chicken drumsticks in the preheated oven for about 35 minutes. After the first 20 minutes, baste the drumsticks with the reserved marinade to enhance the glaze.

            Glaze for Perfection: Increase the oven temperature to 425°F (220°C) for the last 10–15 minutes of baking, allowing the chicken to crisp up and the glaze to caramelize. Use a meat thermometer to check for doneness (165°F/74°C in the thickest part of the drumstick).

              Serve: Once cooked, remove the drumsticks from the oven and let them rest for 5 minutes. Garnish with fresh thyme sprigs if desired, and serve warm.
