Ingredients

1 cup rolled oats

2 cups almond milk (unsweetened)

2 tablespoons pure maple syrup

1/4 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/4 cup sliced almonds

1/2 cup diced fresh fruit (e.g., apples or bananas)

A pinch of salt

Optional toppings: additional maple syrup, more sliced almonds, or fresh berries

Instructions

In a large mixing bowl, combine the rolled oats, almond milk, maple syrup, vanilla extract, ground cinnamon, and a pinch of salt.

Stir well until all the ingredients are thoroughly combined. Make sure that the oats are fully submerged in the liquid.

Layer half of the sliced almonds and diced fresh fruit into the mixture, gently folding them in.

Divide the oat mixture evenly into two airtight containers or jars, leaving a little space at the top for the oats to expand as they soak.

Top each jar with the remaining sliced almonds and any additional fruit you like. Drizzle a bit more maple syrup on top if desired.

Seal the jars and refrigerate them overnight (or for at least 4 hours).

In the morning, give the oats a good stir before enjoying. You can add a splash more almond milk if you prefer a creamier consistency.
