1 cup unsweetened almond milk (or any preferred milk)

1/4 cup chia seeds

2 tablespoons maple syrup (or honey for non-vegan option)

Zest of 1 lime

Juice of 2 limes

1 ripe mango, diced

Pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

In a mixing bowl, combine the almond milk, chia seeds, maple syrup, lime zest, lime juice, and a pinch of salt. Whisk together until combined and the chia seeds are evenly distributed.

    Let the mixture sit for about 5 minutes, then give it another good whisk to prevent clumping of the chia seeds.

      Cover the bowl or transfer the mixture to a mason jar. Refrigerate for at least 4 hours, but preferably overnight, to allow the chia seeds to absorb the liquid and thicken.

        Once the pudding has reached a creamy consistency, give it a quick stir. If it's too thick for your preference, add a splash more almond milk to loosen it up.

          To serve, layer the chia pudding in serving glasses or bowls with diced mango on top.
