3 ripe mangoes, peeled and diced (about 4 cups)

1 cup freshly squeezed lemon juice (about 4-6 lemons)

1 cup sugar (adjust to taste)

1 cup water

1 teaspoon lemon zest

Fresh mint leaves for garnish

Small plastic or wooden spoons for serving

Instructions
 

Prepare the Simple Syrup: In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar is dissolved. Remove from heat and let it cool completely.

    Blend the Mangoes: In a blender, add the diced mangoes, freshly squeezed lemon juice, cooled simple syrup, and lemon zest. Blend until smooth and creamy.

      Strain (Optional): If you prefer a smoother texture, strain the mixture through a fine-mesh sieve to remove any fibrous bits.

        Chill the Mixture: Pour the mango-lemon mixture into a bowl and refrigerate for about 1-2 hours, or until it’s thoroughly chilled.

          Freeze the Sorbet: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency (about 20-25 minutes).

            If you don’t have an ice cream maker, transfer the mixture to a shallow dish and freeze for 1-2 hours, stirring every 30 minutes to break up ice crystals until desired texture is achieved.
