Ingredients

2 medium boneless, skinless chicken breasts

1 ripe mango, diced

1 small red onion, finely chopped

1-2 jalapeños, seeds removed and minced (adjust to heat preference)

1 cup cooked brown rice or quinoa

1 cup black beans (canned, drained and rinsed)

1 avocado, sliced

1 cup cherry tomatoes, halved

Juice of 1 lime

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro for garnish

Instructions

Marinate the Chicken: In a mixing bowl, combine olive oil, lime juice, ground cumin, smoked paprika, salt, and pepper. Add the chicken breasts and coat well with the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for better flavor).

Cook the Chicken: Preheat a grill pan or skillet over medium-high heat. Remove the chicken from the marinade and cook for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Let it rest for a few minutes before slicing it into strips.

Prepare the Salsa: In a small bowl, combine the diced mango, chopped red onion, minced jalapeños, and a pinch of salt. Toss gently to mix, then set aside to let the flavors meld.

Assemble the Bowls: In each serving bowl, layer a base of cooked brown rice or quinoa. Top with black beans, sliced avocado, grilled chicken strips, halved cherry tomatoes, and a generous scoop of the mango jalapeño salsa.

Garnish: Finish with chopped fresh cilantro for an added burst of flavor, and drizzle with extra lime juice if desired.

Serve: Enjoy your vibrant and refreshing Mango Jalapeño Chicken Bowls warm!
