Mango Glazed Turkey

Ingredients
  

1 whole turkey (12-14 pounds)

1 cup mango juice

1 cup fresh mango puree (about 2 ripe mangos)

1/2 cup honey

1/4 cup soy sauce

1/4 cup olive oil

2 tablespoons fresh ginger, minced

4 cloves garlic, minced

1 tablespoon Dijon mustard

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Prepare the Turkey:

    - Thaw the turkey in the refrigerator for several days, if frozen. Remove the giblets and neck from the cavity, and pat the turkey dry with paper towels.

      Make the Mango Glaze:

        - In a medium saucepan over medium heat, combine the mango juice, mango puree, honey, soy sauce, olive oil, ginger, garlic, Dijon mustard, cumin, and smoked paprika.

          - Stir well and bring the mixture to a gentle boil. Reduce the heat and let it simmer for about 10-15 minutes until it slightly thickens. Remove from heat and let it cool.

            Season the Turkey:

              - Preheat your oven to 325°F (165°C).

                - Season the inside of the turkey cavity with salt and pepper. Optionally, you can stuff the turkey cavity with sliced onions, lemon, and fresh herbs for added flavor.

                  Glaze the Turkey:

                    - Place the turkey on a roasting rack in a large roasting pan. Brush the turkey generously with the mango glaze, making sure to coat it thoroughly. Reserve some glaze for basting during the cooking process.

                      Roast the Turkey:

                        - Roast the turkey in the preheated oven. Baste the turkey with the reserved glaze every 30 minutes. The cooking time will vary, but generally, roast for about 13-15 minutes per pound. The turkey is done when its internal temperature reaches 165°F (74°C) in the thickest part of the thigh.

                          Rest and Serve:

                            - Once cooked, remove the turkey from the oven and let it rest for at least 20-30 minutes before carving. This allows the juices to redistribute throughout the meat.

                              - Garnish with fresh cilantro or parsley if desired, and serve with your favorite sides.
