1 pound large shrimp, peeled and deveined

1 ripe mango, diced

1 tablespoon olive oil

2 tablespoons honey

1 tablespoon soy sauce

1 tablespoon lime juice

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

Salt and pepper, to taste

1/4 teaspoon red pepper flakes (optional, for a kick)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Make the Mango Glaze: In a blender, combine the diced mango, honey, soy sauce, lime juice, minced garlic, ginger, salt, and pepper. Blend until smooth.

    Marinate the Shrimp: In a large bowl, toss the shrimp with half of the mango glaze (reserve the other half for later). Ensure the shrimp are well-coated. Let them marinate for about 15-30 minutes in the refrigerator.

      Cook the Shrimp: In a skillet, heat olive oil over medium-high heat. Once hot, add the marinated shrimp to the skillet in a single layer. Cook for 2-3 minutes on one side until they turn pink, then flip and cook for an additional 2-3 minutes until fully cooked.

        Finish with Glaze: Pour the reserved mango glaze over the cooked shrimp and stir well to combine. Let it simmer for an additional 1-2 minutes until slightly thickened.
