Ingredients

1 lb ground beef (80/20 or preferred lean-to-fat ratio)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

1 large head of romaine lettuce or butter lettuce (for the cups)

½ cup diced tomatoes

½ cup diced pickles

¼ cup diced red onion

¼ cup mayonnaise (can substitute with avocado or Greek yogurt)

1 tablespoon mustard (optional)

Fresh herbs for garnish (such as parsley or cilantro, optional)

Instructions

Prepare the Ingredients: Rinse the lettuce leaves carefully and pat them dry. Set aside. Dice the tomatoes, pickles, and red onion.

Cook the Beef: In a large skillet over medium-high heat, heat the olive oil. Add the ground beef, breaking it apart with a spatula. Season with garlic powder, onion powder, smoked paprika, salt, and pepper. Cook until browned and fully cooked through, about 8-10 minutes. Drain excess fat if necessary.

Add Cheese: Sprinkle the shredded cheddar cheese evenly over the cooked beef. Reduce heat to low, cover the skillet, and allow the cheese to melt for about 2-3 minutes.

Assemble the Cups: Take a lettuce leaf and spoon some of the cheesy beef mixture into the center of the leaf. Top with diced tomatoes, pickles, red onion, and a dollop of mayonnaise and mustard if desired.

Garnish and Serve: Sprinkle fresh herbs on top for added flavor and freshness if using. Serve immediately, allowing guests to fold the lettuce leaves around the filling like a taco.
