4 large russet potatoes

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon chili powder

Salt and pepper, to taste

1 cup shredded cheddar cheese

1 cup cooked and crumbled hatch chili sausage (or a vegetarian sausage alternative)

1/2 cup sour cream

1/4 cup chopped green onions

1/4 cup diced fresh tomatoes

Fresh cilantro, for garnish (optional)

Jalapeño slices, for extra heat (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.

    Prep the Potatoes: Wash and scrub the potatoes thoroughly. Cut each potato lengthwise into wedges (about 8 wedges per potato) and place them in a large bowl.

      Season the Wedges: Drizzle the olive oil over the potato wedges. Sprinkle with smoked paprika, garlic powder, onion powder, chili powder, salt, and pepper. Toss until the wedges are evenly coated.

        Bake the Wedges: Arrange the seasoned potato wedges in a single layer on the prepared baking sheet, making sure they aren’t overcrowded. Bake in the preheated oven for 30-35 minutes, flipping them halfway through, until they are golden and crispy.
