Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

1 tablespoon poppy seeds

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

2 large eggs, at room temperature

½ cup plain Greek yogurt

¼ cup unsweetened applesauce

¼ cup vegetable oil

Zest of 1 large lemon

2 tablespoons fresh lemon juice

1 teaspoon vanilla extract

Optional: Extra lemon zest and poppy seeds for garnish

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a standard muffin tin with paper liners or spray it with non-stick cooking spray.

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt until well combined.

Mix Wet Ingredients: In another bowl, beat the eggs, then add the Greek yogurt, applesauce, vegetable oil, lemon zest, lemon juice, and vanilla extract. Whisk until everything is smoothly combined.

Combine Mixtures: Pour the wet ingredients into the bowl of dry ingredients. Stir gently using a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are fine.

Fill Muffin Tins: Use a cookie scoop or spoon to divide the batter evenly among the muffin cups, filling each about ¾ full. If desired, sprinkle a touch of extra poppy seeds and lemon zest on top for garnish.

Bake: Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool: Remove the muffins from the oven and allow them to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: Serve the muffins warm or at room temperature. They pair perfectly with a cup of tea or coffee, making them a delightful treat for breakfast or an afternoon snack.
