12 oz (340g) pasta (linguine or spaghetti)

1 cup ricotta cheese

1 lemon (zest and juice)

2 tbsp olive oil

2 cloves garlic, minced

½ cup grated Parmesan cheese

Salt, to taste

Black pepper, to taste

Fresh basil leaves, for garnish

Optional: Red pepper flakes, for a bit of heat

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.

    Prepare the Sauce: In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to let it brown.

      Incorporate Ricotta: Lower the heat. Add the ricotta cheese, lemon zest, and lemon juice to the skillet. Stir to combine and let it warm up for 2-3 minutes. If the mixture seems too thick, gradually add some reserved pasta water until reaching your desired consistency.
