Ingredients
  

1 cup fresh basil leaves

1/3 cup toasted pine nuts

1/2 cup grated Parmesan cheese

2 garlic cloves, minced

1/2 cup extra virgin olive oil

Zest and juice of 1 lemon

Salt and pepper to taste

Mini mozzarella balls (bocconcini)

Cherry tomatoes, halved

Fresh arugula for garnish

Balsamic glaze for drizzling

Instructions
 

Make the Lemon Pesto: In a food processor, combine the basil leaves, toasted pine nuts, Parmesan cheese, minced garlic, lemon zest, lemon juice, and a pinch of salt and pepper. Pulse until the ingredients are finely chopped and blended.

    Add Olive Oil: With the food processor running, slowly stream in the extra virgin olive oil until the pesto reaches a smooth, thick consistency. Taste and adjust seasoning if needed.

      Assemble the Spoons: In a small spoon or appetizer dish, place a mini mozzarella ball at the bottom. Add a spoonful of the lemon pesto on top, then add a half of a cherry tomato for a pop of color.
