Lemon Herb Grilled Salmon with Green Beans

For the Salmon:

4 salmon fillets (skin on or off, your choice)

2 tablespoons olive oil

Juice of 1 large lemon

Zest of 1 large lemon

4 cloves garlic, minced

2 teaspoons fresh dill, chopped (or 1 teaspoon dried)

2 teaspoons fresh parsley, chopped (or 1 teaspoon dried)

1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried)

Salt and pepper to taste

For the Green Beans:

1 pound fresh green beans, trimmed

1 tablespoon olive oil

Salt and pepper to taste

Zest of 1/2 lemon (optional)

1 teaspoon slivered almonds (optional, for garnish)

Instructions
 

Marinate the Salmon:

    In a bowl, combine olive oil, lemon juice, lemon zest, minced garlic, dill, parsley, thyme, salt, and pepper. Place salmon fillets in a dish and pour the marinade over them. Cover and let marinate in the refrigerator for at least 30 minutes, preferably up to 1 hour to enhance the flavors.

      Prepare the Green Beans:

        While the salmon is marinating, bring a pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes until bright and tender-crisp. Drain and immediately plunge into ice water to stop the cooking. Once cool, drain again and set aside.

          Grill the Salmon:

            Preheat your grill (outdoor or indoor) to medium-high heat. Remove the salmon from the marinade and place it skin-side down on the grill. Grill for about 5-7 minutes on each side, depending on thickness, until the salmon is cooked through and flakes easily with a fork. If using skin-on, it will turn crispy and delicious!
