Lemon Herb Grilled Salmon with Asparagus

4 salmon fillets (about 6 ounces each)

1 bunch of fresh asparagus (about 1 pound)

3 tablespoons olive oil, divided

2 tablespoons fresh lemon juice

Zest of 1 lemon

4 cloves garlic, minced

1 tablespoon fresh dill, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon salt

½ teaspoon black pepper

Lemon wedges, for serving

Marinate the Salmon: In a small bowl, mix 2 tablespoons of olive oil, lemon juice, lemon zest, minced garlic, dill, parsley, salt, and pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Cover and let marinate in the refrigerator for at least 30 minutes.

    Prepare the Asparagus: While the salmon is marinating, rinse the asparagus under cold water and trim the tough ends. In a large bowl, toss the asparagus with the remaining 1 tablespoon of olive oil, a pinch of salt, and black pepper. Make sure the asparagus is evenly coated.

      Preheat the Grill: Preheat your grill to medium-high heat. If you are using a grill pan, heat it over medium-high heat on the stovetop.

        Grill the Salmon: Remove the salmon from the marinade and place it skin-side down on the grill. Cook for about 4-5 minutes per side, depending on the thickness of the fillets, or until the internal temperature reaches 145°F (63°C).

          Grill the Asparagus: At the same time, place the asparagus on the grill. Grill for about 5-7 minutes, turning occasionally until they are tender and slightly charred.

            Serve: Once the salmon and asparagus are cooked, transfer them to a serving plate. Serve warm with fresh lemon wedges on the side for an added zing.
