Marinate the Chicken: In a medium bowl, whisk together lemon juice, lemon zest, olive oil, minced garlic, oregano, thyme, salt, and pepper. Add the chicken breasts, ensuring they are well-coated in the marinade. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

    Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, bring the vegetable or chicken broth to a boil.
