1 large head of cauliflower

3 tablespoons olive oil

2 tablespoons fresh lemon juice

Zest of 1 lemon

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Prepare the Cauliflower: Remove the leaves from the cauliflower and trim the stem. Stand the head upright on a cutting board. Using a sharp knife, slice the cauliflower into 1-inch thick steaks. Depending on the size of the cauliflower, you should get about 2-3 steaks. Save any leftover florets for another use.

    Make the Marinade: In a bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, smoked paprika, red pepper flakes (if using), salt, and pepper.

      Marinate the Steaks: Place the cauliflower steaks in a large baking dish or on a rimmed baking sheet. Brush both sides generously with the marinade, ensuring they are well-coated. Let them marinate for at least 20 minutes at room temperature or cover and refrigerate for up to 1 hour to enhance the flavors.

        Preheat the Grill or Oven: If grilling, preheat your grill to medium-high heat. If baking, preheat your oven to 425°F (220°C).

          Cook the Cauliflower Steaks:

            - For Grilling: Once the grill is hot, place the marinated cauliflower steaks on the grill and cook for about 5-7 minutes on each side, or until you achieve nice grill marks and the steaks are tender.

              - For Baking: Place the marinated cauliflower steaks on a lined baking sheet and roast in the oven for about 25-30 minutes, flipping halfway through, until the edges are golden and the steaks are tender.

                Serve: Remove the cauliflower steaks from the grill or oven and let them rest for a minute. Garnish with fresh parsley and serve with lemon wedges on the side for an extra burst of citrus.
