1 lb large shrimp, peeled and deveined

3 medium zucchinis, spiralized into noodles

4 cloves garlic, minced

1 medium lemon (juice and zest)

1/4 cup olive oil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/4 cup freshly chopped parsley (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Prepare the Zucchini Noodles:

    - Using a spiralizer, create zucchini noodles from the zucchinis. If you don't have a spiralizer, you can use a vegetable peeler to create thin strips. Set the noodles aside.

      Sauté the Garlic:

        - In a large skillet, heat 2 tablespoons of olive oil over medium heat.

          - Add the minced garlic and sauté for about 1 minute, or until fragrant but not browned.

            Cook the Shrimp:

              - Increase the heat to medium-high and add the shrimp to the skillet.

                - Season with salt, pepper, and red pepper flakes, if using.

                  - Cook for about 2-3 minutes on one side, then flip and cook for another 2-3 minutes until the shrimp are pink and opaque.

                    Add Lemon Flavor:

                      - Once the shrimp are cooked, squeeze in the lemon juice and add the lemon zest.

                        - Pour in the remaining olive oil and stir well to combine the flavors. Let it cook for an additional minute.

                          Toss the Zucchini Noodles:

                            - Add the zucchini noodles to the skillet with the shrimp.

                              - Toss everything together gently for about 1-2 minutes to warm the noodles without overcooking them.

                                Serve:

                                  - Remove from heat and sprinkle with chopped parsley for garnish.

                                    - Serve immediately, optionally topped with grated Parmesan cheese for an extra layer of flavor.
