3 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

8-10 skewers (if using wooden skewers, soak them in water for 30 minutes)

Prepare the Marinade: In a medium bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, dried oregano, red pepper flakes, salt, and pepper.

    Marinate the Shrimp: Add the peeled and deveined shrimp to the bowl and toss to coat them evenly with the marinade. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (up to 2 hours for more flavor).

      Preheat the Grill: Preheat your grill or grill pan over medium heat.

        Assemble the Skewers: Thread the marinated shrimp onto the skewers, about 4-5 shrimp per skewer, ensuring they are evenly spaced.

          Grill the Shrimp: Place the skewers on the preheated grill. Cook for about 2-3 minutes on each side or until the shrimp turn pink and opaque. Do not overcook, as shrimp can become rubbery.
