1 lb large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

3 tablespoons olive oil, divided

4 cloves garlic, minced

Juice and zest of 1 lemon

1 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges, for serving

Instructions
 

Prep the Shrimp: Rinse the shrimp under cold water and pat dry with paper towels. Season them with salt, pepper, and half of the lemon juice. Set aside.

    Sauté Asparagus: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the asparagus pieces and a pinch of salt. Sauté for about 4-5 minutes, or until the asparagus is bright green and tender-crisp. Remove the asparagus from the skillet and set aside.

      Cook Garlic: In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 30 seconds, or until fragrant—be careful not to let it brown.

        Add Shrimp: Add the seasoned shrimp to the skillet, followed by red pepper flakes. Cook for 2-3 minutes on each side, or until they turn pink and opaque.

          Combine Ingredients: Once the shrimp are cooked, return the asparagus to the skillet. Add the remaining lemon juice and zest, and toss everything together. Cook for an additional minute to heat through.

            Garnish and Serve: Remove from heat and garnish with chopped parsley. Serve immediately with lemon wedges on the side for an extra zing.
