Ingredients

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/4 cup unsalted butter, chilled and cubed

1 cup sharp cheddar cheese, shredded

1/2 cup pickled jalapeños, chopped (adjust for spice preference)

3/4 cup buttermilk (or regular milk with a splash of vinegar)

1 large egg (for egg wash, optional)

Fresh herbs (like chives or cilantro) for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Whisk them together until well incorporated.

Cut in Butter: Add the chilled and cubed butter to the flour mixture. Using a pastry cutter or your fingertips, work the butter into the flour until the mixture resembles coarse crumbs.

Add Cheese and Jalapeños: Gently fold in the shredded cheddar cheese and chopped pickled jalapeños until evenly distributed.

Incorporate Wet Ingredients: Pour in the buttermilk and mix until just combined. Be careful not to overwork the dough; it’s okay if it’s a bit crumbly.

Shape the Biscuits: Turn the dough onto a floured surface. Gently knead it a few times to bring it together. Pat the dough into a rectangle about 1-inch thick. Use a sharp knife or biscuit cutter to cut out biscuits.

Bake the Biscuits: Place the biscuits on the prepared baking sheet. If desired, whisk the egg and brush it on top of each biscuit for a golden finish. Bake in the preheated oven for 15-18 minutes, or until golden brown.

Cool and Serve: Remove from the oven and allow the biscuits to cool on a wire rack for a few minutes. Serve warm, ideally with eggs or breakfast meats if desired. Garnish with fresh herbs for added flavor and color.
