1 lb Italian sausage (mild or spicy, your choice), casings removed

2 tablespoons olive oil

1 large onion, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

1 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped (for garnish)

Salt and pepper to taste

1 cup cooked pasta or crusty bread for serving (optional)

Instructions
 

Cook the Sausage: In a large skillet over medium heat, add the olive oil. Once hot, add the sausage. Break it up into small pieces with a spatula. Cook until browned and fully cooked through, about 6-8 minutes. Transfer the sausage to a plate and set aside.

    Sauté the Vegetables: In the same skillet, add the sliced onion and bell peppers. Sauté for about 5 minutes, or until they start to soften. Stir in the minced garlic, oregano, basil, and red pepper flakes. Cook for an additional 2 minutes until fragrant.

      Combine Ingredients: Add the cherry tomatoes to the skillet and cook for 3-4 minutes, until they soften and start to burst. Return the browned sausage to the pan, mixing it well with the vegetables. Season with salt and pepper to taste.
