8 oz. rotini pasta

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini)

1 cup pepperoni slices

1 cup cucumber, diced

1/2 cup Kalamata olives, pitted and sliced

1/2 cup bell peppers (red, yellow, or green), diced

1/4 cup fresh basil leaves

1/3 cup extra-virgin olive oil

2 tbsp red wine vinegar

1 tsp Italian seasoning

Salt and pepper to taste

Skewers (8-inch or longer)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper to taste. Set aside.
