Ingredients

2 cups fresh blackberries

1 cup plain Greek yogurt (or your choice of yogurt)

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract (optional)

Pinch of salt

Mini muffin tin or silicone molds

Instructions

Prepare the Blackberries: Rinse the blackberries under cold water and pat them dry gently with a paper towel. If you prefer smaller bites, you can cut the blackberries in half.

Mix the Yogurt: In a medium mixing bowl, combine the Greek yogurt, honey, vanilla extract, and a pinch of salt. Stir until the ingredients are well-blended and smooth.

Layer the Mixture: Place a few blackberries in each cup of the mini muffin tin or silicone molds. Pour the yogurt mixture over the blackberries until they are just covered.

Freeze the Bites: Gently tap the muffin tin or molds on the countertop to remove any air bubbles. Cover the tin with plastic wrap or aluminum foil and place it in the freezer. Freeze for at least 4 hours or until fully set.

Release the Bites: Once the yogurt bites are fully frozen, remove them from the freezer. If you used a muffin tin, let them sit at room temperature for a couple of minutes to soften slightly, which helps release them more easily. Carefully pop the yogurt bites out of the molds.

Serve and Enjoy: Serve the icy blackberry yogurt bites immediately or store them in an airtight container in the freezer for up to 2 weeks. Enjoy as a refreshing snack or a healthy dessert!
