Ingredients

For the Salmon:

4 (6 oz) salmon fillets, skin removed

3 tablespoons honey

3 tablespoons Dijon mustard

1 tablespoon olive oil

Salt and pepper to taste

For the Salad:

8 cups mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 cucumber, thinly sliced

½ red onion, thinly sliced

¼ cup feta cheese, crumbled

¼ cup walnuts, toasted

For the Dressing:

2 tablespoons apple cider vinegar

½ tablespoon honey

1 tablespoon Dijon mustard

3 tablespoons olive oil

Salt and pepper to taste

Instructions

Prepare the Honey Mustard Glaze: In a small bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper until well combined.

Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the honey mustard glaze over the top. Let it marinate for at least 20 minutes.

Cook the Salmon: Preheat your grill or a non-stick skillet over medium-high heat. Remove the salmon from the marinade, allowing excess glaze to drip off. Grill or cook the salmon for about 4-5 minutes per side until it flakes easily with a fork. Brush with the remaining glaze halfway through cooking for added flavor. Once cooked, remove from heat and let it rest.

Prepare the Salad Base: In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and walnuts. Toss gently to mix.

Make the Dressing: In a small bowl, whisk together apple cider vinegar, honey, Dijon mustard, olive oil, salt, and pepper until emulsified.

Assemble the Salad: Top the salad with the grilled salmon fillets, drizzling any remaining dressing on top. For a decorative touch, sprinkle a bit of extra feta and walnuts.

Serve: Serve immediately while the salmon is still warm, and enjoy your vibrant Honey Mustard Glazed Salmon Salad!
