Honey Mustard Chicken and Apple Skewers

1 lb (450g) boneless, skinless chicken breasts, cut into 1-inch pieces

2 medium apples (such as Honeycrisp or Granny Smith), cored and cut into 1-inch chunks

1/4 cup honey

1/4 cup Dijon mustard

2 tbsp olive oil

1 tbsp apple cider vinegar

1 tsp garlic powder

1/2 tsp onion powder

Salt and pepper, to taste

8 to 10 skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions
 

Prepare the Marinade: In a mixing bowl, whisk together honey, Dijon mustard, olive oil, apple cider vinegar, garlic powder, onion powder, salt, and pepper until well combined.

    Marinate the Chicken: Add the chicken pieces to the marinade, ensuring they are fully coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

      Assemble the Skewers: Preheat your grill to medium-high heat. Thread the marinated chicken and apple chunks onto the skewers, alternating between chicken and apple until all ingredients are used.

        Grill the Skewers: Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the chicken is thoroughly cooked and has nice grill marks (internal temperature should reach 165°F or 75°C) and the apples are slightly caramelized.

          Serve: Carefully remove from the grill and let cool for a couple of minutes. Serve the skewers drizzled with any remaining marinade or alongside a fresh salad for added crunch.
