For the Honey Garlic Chicken:

1.5 lbs (680g) boneless skinless chicken thighs, cut into bite-sized pieces

1/4 cup honey

1/4 cup soy sauce

3 cloves garlic, minced

1 tablespoon sesame oil

1 teaspoon ginger, grated

2 tablespoons vegetable oil

Salt and pepper to taste

Green onions, chopped (for garnish)

Sesame seeds (for garnish)

For the Sweet Corn Fritters:

2 cups fresh or frozen sweet corn kernels

1/2 cup all-purpose flour

1/2 cup cornmeal

1 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon smoked paprika

2 large eggs

1/4 cup milk

1/4 cup chopped fresh cilantro or parsley

Oil for frying

Instructions
 

Prepare the Honey Garlic Sauce:

    - In a medium bowl, whisk together honey, soy sauce, minced garlic, sesame oil, and grated ginger. Set aside.

      Marinate the Chicken:

        - Season chicken pieces with salt and pepper then add them to the bowl with the honey garlic sauce. Let marinate for at least 30 minutes, preferably 2 hours in the refrigerator for enhanced flavor.

          Cook the Chicken:

            - Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.

              - Add the marinated chicken, reserving the sauce. Cook for about 6-8 minutes, stirring occasionally, until the chicken is cooked through and golden brown. Pour in the reserved sauce and bring to a simmer. Cook for an additional 2-3 minutes until the sauce thickens slightly. Garnish with chopped green onions and sesame seeds.

                Make the Corn Fritters:

                  - In a large mixing bowl, combine the flour, cornmeal, baking powder, salt, black pepper, and smoked paprika.

                    - In a separate bowl, whisk together the eggs and milk. Pour this into the dry ingredients, stirring to combine. Gently fold in the corn kernels and chopped cilantro or parsley.

                      Fry the Fritters:

                        - In a skillet, heat oil over medium heat. For each fritter, drop about 2 tablespoons of the batter into the skillet, flattening slightly. Fry in batches for 3-4 minutes on each side or until golden brown and crispy. Drain on paper towels.

                          Serve:

                            - Plate the honey garlic chicken alongside a generous helping of sweet corn fritters. Serve hot, and enjoy the delightful harmony of flavors!
