4 boneless, skinless chicken thighs (about 1.5 pounds)

Salt and black pepper, to taste

1 cup onion, diced

2 cloves garlic, minced

1 cup long-grain rice, rinsed

2 cups chicken broth

1/4 cup honey

1/4 cup Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon dried thyme

1 cup frozen peas

Fresh parsley, chopped (for garnish)

Sear the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken thighs with salt and black pepper. Add the chicken to the skillet and sear for 5-7 minutes on each side until golden brown. Remove from the skillet and set aside.

    Sauté Aromatics: In the same skillet, add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.
