2 cups cooked jasmine rice

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

1/4 cup honey

2 tablespoons chipotle in adobo sauce (minced)

2 tablespoons soy sauce

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional, for extra heat)

Salt and pepper to taste

1 cup corn (canned or frozen)

1 cup black beans (canned, rinsed, and drained)

1 avocado, diced

1/2 cup cherry tomatoes, halved

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Chicken: In a mixing bowl, combine honey, chipotle in adobo sauce, soy sauce, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper. Add the cut chicken thighs, and toss to coat. Allow to marinate for at least 30 minutes, or up to overnight in the refrigerator for maximum flavor.

    Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the marinated chicken thighs, cooking for about 5-7 minutes until they are browned and cooked through, stirring occasionally. Ensure the internal temperature reaches 165°F (75°C).

      Prepare the Rice: While the chicken is cooking, prepare your jasmine rice according to package instructions. Fluff with a fork once cooked.

        Heat the Veggies: In the same skillet (you can remove the chicken temporarily), add the corn and black beans to heat through, about 2-3 minutes.
