1 lb (450g) ground turkey

8 oz (225g) mushrooms, sliced (button or cremini)

1 medium onion, diced

2 cloves garlic, minced

1 cup (240ml) chicken broth

1 cup (240ml) sour cream

2 tbsp Worcestershire sauce

1 tbsp Dijon mustard

1 tsp paprika

1 tsp dried thyme

2 tbsp olive oil

Salt and pepper to taste

8 oz (225g) egg noodles (or pasta of choice)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Noodles: In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain, reserving a bit of the pasta water. Set aside.

    Sauté Vegetables: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and cook for about 3-4 minutes, until it becomes translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

      Brown the Turkey: Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes. Season with salt, pepper, and paprika.

        Cook the Mushrooms: Stir in the sliced mushrooms and cook until they have released their moisture and become tender, about 5-6 minutes.

          Add Liquids and Seasoning: Pour in the chicken broth, Worcestershire sauce, Dijon mustard, and dried thyme. Stir well to combine. Allow the mixture to simmer for about 5 minutes to let the flavors meld.

            Stir in Sour Cream: Lower the heat and gradually stir in the sour cream until fully incorporated. If the sauce is too thick, add a small amount of reserved pasta water to reach desired consistency. Taste and adjust seasoning with salt and pepper.

              Combine with Noodles: Add the drained pasta to the skillet and gently toss to combine, ensuring the noodles are well coated with the creamy turkey and mushroom sauce.

                Serve: Divide the stroganoff among serving plates, garnishing with fresh chopped parsley for added flavor and color.
