  • 4.0 pieces boneless, skinless chicken breasts
  • 1.0 cup long-grain white rice
  • 10.5 oz cream of chicken soup
  • 2.0 cups chicken broth
  • 1.0 medium onion, diced
  • 2.0 cloves garlic, minced
  • 1.0 teaspoon dried thyme
  • 1.0 teaspoon paprika
  • 1.0 teaspoon onion powder
  • 1.0 teaspoon garlic powder
  • 0.0 teaspoon salt and pepper, to taste
  • 1.0 cup frozen mixed vegetables
  • 2.0 tablespoons soy sauce
  • 0.0 to taste fresh parsley, chopped

Instructions
 

  • Prepare Chicken: Season the chicken breasts generously with salt, pepper, paprika, onion powder, and garlic powder. This will ensure the meat is flavorful.
  • Layer Ingredients: In the bottom of the crockpot, add the rinsed rice. Next, place the seasoned chicken breasts on top of the rice.
  • Mix Liquids: In a separate bowl, whisk together the cream of chicken soup, chicken broth, diced onion, minced garlic, dried thyme, and soy sauce (if using). Stir until well combined.
  • Combine: Pour the soup mixture evenly over the chicken and rice in the crockpot. Add the frozen mixed vegetables on top without stirring. Season the mixture with a bit more salt and pepper to taste.
